How do GMP, HACCP, ISO 22000 and FSSC 22000 fit together? Foundational manufacturing and hygiene practices support hazard control. HACCP organizes hazard-analysis decisions. ISO 22000 provides a food safety management-system framework, while FSSC 22000 is a certification scheme that combines ISO 22000 with applicable prerequisite-programme and additional scheme requirements.

GMP and hygiene foundations

Good manufacturing practices concern the everyday conditions and methods needed for consistent, suitable production. In food safety work, hygiene foundations include attention to premises, equipment, cleaning, personal hygiene, materials and process conditions. These foundations need to operate reliably before a team can depend on more specific hazard controls.

The FAO Good Hygiene Practices and HACCP Toolbox is an authoritative learning resource. Check the terminology and requirements applicable to your sector; a general educational list is not a complete regulatory checklist.

HACCP and the logic of hazard control

Hazard Analysis and Critical Control Point, or HACCP, is a structured approach to evaluating food safety hazards and identifying appropriate controls. Its usefulness depends on a correct understanding of the product and process. Monitoring, action when controls fail, verification and records connect the plan to day-to-day operation.

A copied HACCP plan may describe a process that your facility does not use. Begin with an accurate process description and evaluate the evidence relevant to the actual product and intended use.

ISO 22000 and the management system

ISO 22000 sets requirements for a food safety management system. The management-system perspective connects hazard control with responsibilities, communication, resources, evaluation and improvement. Reading the standard owner’s overview helps explain the purpose; applying the requirements requires access to the appropriate standard and organization-specific evidence.

FSSC 22000 and certification scope

FSSC 22000 is a scheme with its own documents and applicable requirements. It is not simply another name for HACCP or an awareness workshop. The relevant food-chain category, prerequisite programmes and scheme version matter when defining an organization’s certification scope.

A practical example

Consider a team reviewing a food-packing process. Cleaning and material-handling practices provide a foundation. The hazard review asks what can go wrong for that product and process and how it will be controlled. The management system assigns responsibility, checks effectiveness and organizes corrective work. If certification is needed, the team must then confirm the scheme and scope requested by customers and applicable to the operation.

This is an educational example, not a completed hazard analysis. The actual process, materials, equipment and intended use would need to be assessed.

Frequently asked questions

Does attending HACCP training certify a food business?

A person’s learning or completion record is different from certification of an organization’s system or operation.

Which framework should a business choose?

Start with the product, process, market, applicable requirements and customer expectations. Define the objective before selecting a training course or certification pathway.
